If someone has a serious sweet tooth, there might be more going on than just a preference for dessert. New research finds that people who genuinely love very sweet flavors tend to be more cautious about risk in lottery-style choices, and they show a stronger preference for rewards available right now, though only when an immediate option is actually on the table. The reason may have less to do with impulsiveness than with a heightened sensitivity to uncertainty.

Researchers wanted to understand why people who are highly sensitive to rewards often seem more impulsive. In a study published in Frontiers in Psychology, they used sweet-taste liking as a biologically grounded stand-in for reward sensitivity rather than relying solely on personality questionnaires. Participants drank sugar water in increasing concentrations and rated how pleasant each one tasted. People who rated the highest sugar concentration as the most pleasant were labeled “sweet-likers,” and those who found one of the lower concentrations most pleasant were labeled “sweet-dislikers.” That distinction gave researchers a measure of how strongly a person responds to a basic sensory reward.

What they found was unexpected. Sweet-likers were more likely to pick the sure thing over a gamble, showing more caution about risk in lottery-style choices. When they faced a choice between a small reward available immediately and a larger reward they would have to wait for, sweet-likers leaned toward the immediate option, but that pull showed up only when one reward was actually available right away. When both options required waiting, sweet-likers were actually more willing to hold out for the bigger delayed reward. This was not about a blanket impatience. It was about the specific appeal of something certain and available in the present moment.

How the Sweet-Likers Study Worked

Two separate experiments were conducted. In the first, 49 healthy adults (33 female, mean age 24 years) completed a taste test and two decision-making tasks. During the sweet-taste test, each person sipped small amounts of sugar water at five different sweetness levels, rated how much they liked each sample, and then spat it out. Those who rated the highest concentration as most pleasant were classified as sweet-likers, and all others were classified as sweet-dislikers. Twelve participants fell into the sweet-liker category, and 37 were sweet-dislikers.

Participants then completed a lottery-style task where they chose between a guaranteed payout and a larger but uncertain one. They also played a computer game called the Balloon Analogue Risk Task, pumping up a virtual balloon to earn money while knowing it could pop at any moment and wipe out their earnings. More pumps meant more risk tolerance.

Sweet-likers were less likely to choose the risky lottery option. In the balloon game, however, no significant difference showed up between the two groups. Researchers noted this may reflect the different nature of the two tasks. A lottery presents clear odds and fixed amounts, while the balloon game involves learning from experience and adjusting under pressure. Sweet-likers appeared more sensitive to the first type of explicit, calculated risk.

How Sweet-Likers Handle Waiting for a Reward

Experiment 2 recruited 100 new participants (56 female, mean age roughly 23 years) and replaced the balloon game with a delay task. In this task, participants made 170 choices between a smaller amount available sooner and a larger amount available later, across various combinations of wait times and monetary values.

Twenty-eight participants were classified as sweet-likers, and 72 were sweet-dislikers. As in the first experiment, sweet-likers again showed a stronger preference for the guaranteed option in the lottery task, especially when the odds of winning were 50-50 and uncertainty was at its highest.

In the delay task, a split pattern emerged. When both options required waiting, sweet-likers were more willing to hold out for the bigger delayed reward. When one option was available immediately, they strongly preferred it over the larger delayed payout. The authors describe this as an immediacy bias, a pull toward options that are both certain and available right now, rather than a general impatience or a preference for smaller rewards across the board.

Sweet-liking was not tied to the size of the rewards or the length of the wait times. It was tied specifically to whether something was available immediately. As the authors note in their discussion, this pattern may mean that reward sensitivity plays a specific role in steering attention toward the most noticeable and tangible option, rather than raising the overall value a person places on larger rewards.

Why Sweet-Likers May Not Be as Impulsive as They Seem

One of the more telling findings came from Experiment 2’s delay-discounting model, once researchers factored in each participant’s general willingness to take risks, measured by their lottery choices. After that variable was added to the model, the link between sweet-liking and preference for immediate rewards dropped to only marginally significant. In plain terms, sensitivity to the uncertainty of waiting appears to explain at least part of the connection.

This makes intuitive sense. A delayed reward is never a sure thing, and waiting always carries some risk. A person who instinctively avoids uncertain outcomes may not be acting impulsively so much as cautiously, even if the end result looks the same from the outside.

None of the personality surveys in the study, including measures of sensation-seeking, novelty-seeking, and self-reported impulsiveness, showed any significant difference between sweet-likers and sweet-dislikers. The questionnaire results also indicate that the group differences seen in the decision-making tasks were not reflected in these self-reported personality measures.

What Sweet Preferences Reveal About Everyday Choices

Researchers have long known that people with substance use disorders tend to grab a smaller immediate reward rather than wait for a larger one. Sweet-liking has also been linked to increased risk for substance use disorders. Putting those two threads together, this study points to a connection that may run through risk sensitivity rather than a reckless desire for more rewards.

Practically speaking, the way reward sensitivity connects to impulsive-looking behavior may have more to do with how people weigh uncertainty than with craving or wanting things more intensely. According to the paper’s conclusion, the positive relationship between reward sensitivity and impulsivity may be better explained by a stronger preference for certain rewards than by a heightened desire for immediate ones. Choices that look impulsive from the outside, like taking a smaller reward now instead of holding out for a bigger one later, may sometimes reflect a low tolerance for uncertainty rather than plain impatience. When a delayed payoff feels like a gamble, the bird in the hand becomes far more appealing than the two in the bush, especially when that bird is right in front of them.

Identifying sweet-taste liking as a measurable, biologically grounded marker for reward sensitivity, one that connects to decisions about risk and delayed rewards, gives researchers a practical new starting point. Future research could test whether risk sensitivity helps explain similar choices outside the laboratory, rather than assuming impatience is the whole story.

Limitations

Study authors acknowledge several constraints worth noting.
