Cutting the moldy spot off a peach and eating the rest feels like plain kitchen sense. It seems careful, even frugal. But a new survey from Germany’s Federal Institute for Risk Assessment (BfR) suggests that habit might be giving people a false sense of security. The poisons mold produces don’t necessarily stay where the fuzz is visible, especially in water-rich foods like fresh fruit and vegetables.

Conducted in spring 2026 and published on August 27 in a BfR science report, the survey asked 1,000 people how they think about mold toxins in everyday food. These are poisonous substances some molds release, and they can show up in foods people eat all the time, like bread, fruit, spices, and cheese. Researchers wanted to know not just what people knew, but how they actually behaved when they spotted mold in their kitchens, and what beliefs shaped those choices.

Results showed a mix of good instincts and real blind spots. People are careful about storing food properly and tossing obviously spoiled items like moldy yogurt or meat. But with fresh produce, cheese, or dried spices, many either underestimate the risk or believe cutting away the visible mold solves the problem. Close to half also mistakenly believe that cooking or baking gets rid of mold toxins, when it doesn’t.

How Researchers Studied Attitudes Toward Mold Toxins in Food

BfR ran an online survey between April 14 and April 30, 2026, reaching 1,000 German-speaking adults aged 16 and older living in private households across Germany who use the internet. Researchers randomly selected participants from an online panel and balanced the sample to reflect the country’s population by gender, age, education, and region. Researchers weighted the answers to match those real-world proportions, giving them a fairly accurate snapshot of how German adults think about and handle mold risks in their kitchens.

Why Cutting Off Mold Doesn’t Actually Make Food Safe

Reactions to mold varied a lot depending on what kind of food it showed up on. Moldy yogurt and moldy meat got tossed out almost every time, with 95.5% and 95.4% of people saying they throw those away completely. Fresh fruit and vegetables told a different story: roughly 30.6% of respondents said they typically cut off the moldy section and eat the rest. Similar patterns showed up with cheese, where 22.3% do the same, and air-dried salami, at 19.9%.

That instinct makes sense on the surface, since the mold itself sits in one visible spot. The problem is that in water-rich foods like fresh produce, the toxins mold produces don’t necessarily stay where the mold is growing. They can spread well beyond the visibly moldy area, which is exactly why BfR advises throwing those foods out entirely rather than trimming them. People were also more likely to suspect that fresh fruit and vegetables (24.6%) and cheese (19.1%) might already carry unsafe levels of mold toxins at the time of purchase, compared to dried spices or fruit preparations, where fewer than 12% suspected the same risk.

Heat doesn’t solve the problem either. Only 46.9% of people correctly knew that cooking or baking does not destroy mold toxins. Among the rest, 27.4% believed strong heat can make them harmless, and another 25.7% simply weren’t sure. That gap matters, since it could lead someone to assume a moldy item is fine to eat once it’s been baked or boiled, when the toxins may still be there.

Other awareness gaps showed up too. Just over half of respondents (53.0%) knew that packaged fruit or vegetable products can contain mold toxins, and only 49.4% realized dried spices can carry them as well. Basic knowledge about mold’s invisible spread was stronger: more than 92% of people knew that even good-looking slices in a bag of bread could be contaminated if mold turns up elsewhere in the package, and 85.2% understood that mold toxins themselves are invisible.

One blind spot stood out: vegan milk alternatives like almond or oat drinks. Before taking the survey, only 15.1% of people had ever heard that these products could carry a risk of mold toxins. Among households with kids under 14, 17.8% said they consume these plant-based drinks daily or several times a week. Awareness stayed low across the survey: 67.3% of respondents rated their knowledge of this issue as poor or very poor.

People Fear Mold Toxins Less Than Microplastics or Heavy Metals

Despite these knowledge gaps, mold toxins don’t rank high on the list of things people actually worry about. Just 28.7% of respondents said they feel worried or very worried about the health risks, while 46.5% said they feel little to no concern. In daily life, 79.3% said they rarely or never think about mold toxin risks, and only 3.1% said they think about it often.

Compared with other food risks, mold toxins ranked lowest. About 77.4% of people believe microplastics will hurt their health at some point in their life, compared to just 49.6% who felt the same about mold toxins. Heavy metal residues were also seen as more severe, with 79.9% rating the possible health consequences as serious, compared to 62.6% for mold toxins. Many respondents also said they rarely see mold toxins covered in the news, with 66.5% saying the topic is rarely or never reported on, a pattern that lines up with how little people say they think about it.

Researchers also tested a more gut-level reaction: disgust. Participants looked at pictures of different foods and rated how disgusting they found them on a scale from 0 to 100. A corn cob infested with maggots scored highest at 91.3, followed by a mold-covered potato at 88.7 and a rotten melon at 82.8. Chocolate with a whitish coating (a harmless effect called fat bloom) scored much lower at 60.1, as did raw ground meat at 64.1.

Among these, the moldy potato was the only image showing actual visible mold, and it triggered a strong disgust reaction in 79.8% of participants, who rated it between 80 and 100 on the scale. That lines up with how reliably people avoid food when they can see mold. The catch is that this instinct only works when contamination can be picked up by the senses. It offers no protection against mold toxins hiding in food that looks and smells perfectly normal.

Trust in Food Safety Authorities Stays High Despite the Confusion

People generally trust the institutions responsible for food safety, even while admitting they don’t know much about mold toxins themselves. About 68.9% agreed that food safety authorities operate according to clear rules and standards, 56.4% agreed these authorities act in the public interest, and 50.9% said they do a good job overall.

Some doubts came through too. Nearly half of respondents (47.3%) agreed that these authorities don’t have enough qualified staff, and 34.4% felt economic interests influence food safety decisions enough to put safety at risk. Still, 41.3% of respondents rejected the idea that authorities ignore public concerns, compared with 27.2% who agreed.

Based on these findings, BfR laid out a few recommendations: stepping up education about heat resistance, encouraging people to throw out water-rich moldy produce entirely rather than trimming it, and raising awareness about mold toxins in dried spices and plant-based milk alternatives. The report also suggested that the public’s existing trust in food safety authorities could be a solid foundation for spreading this kind of information more effectively.

That trust might be the most useful takeaway from this survey. People are willing to listen to food safety guidance; they just haven’t been told the full story about how mold toxins actually behave. Cutting mold off a peach and eating the rest feels like common sense, but common sense built on incomplete information isn’t the same as safety. Closing that gap seems to be exactly what this research is aiming to do.
